You keep taking my advice about food and you'll end up fat! <grin!> Better to listen to Luckydog because even if her advice doesn't sound all that tasty - at least you won't end up obese by eating it. Just a friendly warning! I guess if I ever write a cookbook it will have to come with a warning label... "cooking the food in this book will make you fat!"

I make potato pancakes out of raw potatoes. I peel them and then shred them on the "fine shred" side of the shredder. They have to be shredded exceedingly fine. I don't add flour or eggs or anything. I just scoop up the finely shredded potato mixture and dip into hot light olive oil in the pan and fry till golden brown and then flip them over and repeat on the other side.

They come out pretty thin, like regular pancakes. They turn golden brown in the hot oil. Salt after lifting them out of the frying pan. We like to dip them in ketchup. And yes they are larruping!
