I've noticed there haven't been many recipes for salmon. Here's my Favorite.

Salsa Fresca
Mango or Orange
Salmon Fillet

If you buy the salsa fresca, make sure it's in the refrigerated section of the grocery store. It should have fresh tomatos, onions, green peppers, lime juice, cilantro, etc. and should be low sodium (~70mg). Lots of salsa is high sodium--don't want that.

(If you can't get good salsa in your store, I can post a recipe.)

Set oven to broil. (We use our toaster oven.)
Rinse the salmon, debone if necessary. Leave skin on.
When oven's ready put the salmon in skin side down.
After pink on top, turn salmon over.
Should cook ~5 minutes a side. The meat should be flaky and pink (not red) all the way through when done.

Dice up the fruit and toss it in the salsa and stir.

Serve salmon with rice. Cover generously with salsa.
