Saute an onion until it is golden brown. Near the end, add garlic so it is sauteed but not burned.

Add this to the beef broth. Add a can of tomatoes (use a small can of diced tomatoes). Add chopped carrots, celery and potatoes. If you want, also add chopped turnip and shredded cabbage. Simmer a while. Carrots, potatoes, onion and cabbage are inexpensive.

Add a cup of lentils. After simmering 30 minutes, they should be done. At this point, I like to add a little vinegar to acidify the soup so it will last longer. (Bacteria don't like to grow in acid but the lentils won't soften as fast in acid.)

This very frugal dinner is high in nutrition and will last several days.
