One of many recipes for a Brazilian side dish known as Couve a Mineira, or simply "couve" using collard greens. It is quite different from traditional southern American wilted (boiled) collard greens and much quicker and easier.

The basic recipe comprises quick sautee of usually 2-4 minutes of thinly sliced (pre-washed) collard greens, olive oil, chopped garlic, and salt, though there are many variations on this dish (many mainstream recipes mention butter or meat-based fats and flavorings, but those are up to individual preference).

This Test Kitchen (Gourmet Magazine) youtube video explains and demonstrates this simple dish.

Hope you'll enjoy!
