Simon - Looks like you need to start trying to assault castles. Find one that has fairly recently changed hands and it'll have a small garrison. You should be able to overcome at least 2:1 odds if your troops are well trained. I've taken towns with 300 defenders with my current army of around 70 so it's really quite achievable - you just need good quality troops and a steady aim!

Bear in mind that even if you take a castle all on your own you may not be awarded it by the king. I took three castles and a town in my current game, and was awarded non of them by the Great Khan so I renounced my oath and joined up with one of the claimants to someone else's throne. When you're rebelling you get to choose who gets the town/castles you take. Best to spread them around a bit, but you can keep as many as you like technically!
