Top fruit--such as banana, berries, peach, or nectarine--with homemade thick cashew cream (which I always have on hand for coffee creamer), and a generous sprinkle of cardamom. I bet a little saffron would be awesome for special occasions, sort of an Indian dessert.

Speaking of using my Vitamix (for cashew cream), I'm thinking of buying the (expensive) dry-grind accessory to produce my own oat, almond, and rice four as needed (for this gluten-free girl). I've also read it's much easier to make nut butters with the dry blade--anyone with experience to share in that area?

On my last Amazon order I bought an adorable little glass 1/2-liter covered pitcher for cashew cream. I may buy its big sister, a 1-liter covered pitcher for almond milk. At the moment I'm using a plastic pitcher I bought for the RV--not very aesthetically pleasing, though.
