While getting ready for dinner tonight, I once again forget to take meat out to thaw, so while wondering what to make my starving family, I got a little creative. Now, keep in mind, when mommy says she's going to be creative, you can feel an immediate tension in the house. Kinda like, OMG, what this time?

This is what I came up with, I'm sure I'm not the first, but you can get extremely creative with this dish. This is the basics and then you can add what ever you would like.



1 lb. cooked hamburger
2 cans Sloppy Joe Mix (you choice for variety)
2 tubes of ready to bake layered biscuits (you know, the ones in the cooler section, the 4 for a $1 ones)
1 package of shredded cheese

take one tube of biscuits and layer them on the bottom of a cake pan or glass pan, be sure to separate them, so you have more than the package says, that's why the layered ones. They will tear apart and you can cover the bottom of the pan.

In a pan mix the sloppy joe mix and the hamburger and spread it over the biscuits.

Thoroughly cover this mixture with cheese. The more, the better (can never get enough cheese), then take the other tube of biscuits and do the same as you did on the bottom, separate them and cover the top.

Bake in the oven at 400 degrees for about 10-15 minutes until biscuits are done.

You can add anything you want to the sloppy joe mix, onions, peppers, salsa, spices.

Once cooked, you can put sour cream on it, very yummy.

This one was a hit with my family, especially the little girls. They even had 3rds which is very unusual for them!
