Sorry to intrude, but I figured here, of all places, folks would appreciate what I endured the other night.First and foremost, he tried, and he's a nice guy, and I'm not a pit-master, but when our friends had us over for some beef ribs it may have been one of the most miserable meals I've ever had.I've never prepared beef ribs. I like pork and I've got to the point they turn out pretty consistently good, if I do say so myself. I just smoke them in the Weber kettle and do a short finish in foil in the oven and they come out well enough that the family keeps requesting them. These awful ribs from our friend were more bone than meat and what meat there was seemed both tough and dry and glued to the bone. Perhaps someone had lit a cigarette in the neighborhood, but there wasn't so much as a hint of smoke. I casually asked what he'd used for a rub. "Some pre-mix McCormick." "Mmm-hmm. And then?" "A little while on the grill and then the oven." "Wrapped?" "Yep." Hoo, boy. All I can say is, thank goodness for the wife's excellent chocolate cake that we'd brought and I need to find a way to quickly help this poor soul out. He needs it.End of grump.Prof
