The faux dairy thing used to bother me a lot at first too. Similarly for bacon bits (which are kosher!) and fake shrimp etc. But the essence of the halacha isnt that the flavors can't go together; it's that meat and dairy themselves cant go together. Still the desire for fake shrimp or pareve cheeseburgers strikes me as a bit odd.

The prohibition against meat and dairy, arguably the most significant and visible Jewish dietary law, is completely artificial. It's all based on a single sentence in the Torah which does not put any blanket prohibition on eating meat and dairy products together. The single sentence says "you shall not cook a lamb in its mother's fat" (my translation). The bible intended to create a prohibition against a custom of the Canaanites, the inhumane practice of slaughtering a sheep together with its lamb and cooking them together. The primary purpose was to differentiate the rituals of the Israelites from those of the Canaanites. Nothing is said about consuming meat and dairy products at the same time.
