THIN CRUST PIZZA


Preparation Time: 35 minutes
Serving Size: One 10 inch pizza, or 4 appetizer sized pizzas

Ingredients:
3/4 cup pork rind flour **
1/4 cup grated, cheddar cheese ***
1/4 cup grated, mozzarella cheese ***
2 eggs
1/2 of an 8 ounce package of full fat cream cheese ****
1/4 teaspoon dried, oregano leaves
1/4 teaspoon dried, basil leaves
1/4 teaspoon dried, cilantro leaves
1 pinch of pepper
1/4 cup sugar-free, tomato sauce ( I use Hunt's brand)
An additional few tablespoons of tomato sauce for topping
Your favourite toppings, such as different meats and cheeses

** One 80 gram bag of pork rinds yields about one cup of pork rind flour. Using a blender, food processor, or heavy rolling pin and plastic bag, grind or crush pork rinds, ONE at a time (to ensure the pork rinds are ground as find as possible), into a fine powder resembling brown sugar. **

*** You can use whatever cheeses you like in the crust. Sometimes I use all parmesan cheese in the crust, or a mix of several different cheeses. Just make sure that the total amount of cheese used in the crust is 1/2 cup, as the cheese will help to firm up the crust and give it that extra flavour. ***

**** To soften the cream cheese, allow to sit at room temperature for 2 hours. Or, place in a bowl and microwave on high power for 20 seconds. ****

Directions: Preheat oven to 350 Degrees Ferenheit. In a medium bowl, mix pork rind flour and cheeses together. In a small bowl, beat the eggs until they are well blended and a bit frothy. Add cream cheese and mix until thouroughly blended. Add cream cheese/egg mixture, spices, and tomato sauce to the pork rind/cheese mixture Stir until you have achieved a uniform mixture and the cream cheese is completely blended and there are no bits of it remaining.

With a spatula or your hands, spread onto an ungreased baking sheet, about half an inch thick. No matter if you are making one larger pizza or several smaller ones, place the baking sheet in the oven and bake for 22 minutes. Take out of oven, spread a few tablespoons of tomato sauce over the surface of the crust and place your favourite toppings and cheese on the pizza. Return to oven and bake 15 minutes, until cheese is bubbling. Remove from oven. Allow to cool 5 minutes, then serve. Enjoy.
