To MOI--forgot about couscous--I use it in tabbouleh which is insanely easy to make--very healthy and fairly low calorie:

Pour boiling water over couscous according to package directions.

Once coucous is prepared, mix in:

chopped tomatoes
chopped fresh parsley
sliced scallions

Stir in mixture of:

olive oil
fresh lemon juice
salt and pepper to taste

(if you really want to cut calories and fat, the olive oil could be omitted, but it doesn't take alot to add flavor and texture--only 1 or 2 TB--worth the calories, imo)

(chopped, peeled cucumbers and chopped mint are sometimes used--I leave these out since I'm not a big 'mint' fan and 'growing up arab' (dad was middle eastern) during my childhood the tabbouleh we ate did not have cucumbers iirc--so to me leaving it out is more authentic)

I give the same treatment to quinoa, which is a nice change of pace and very nutritious.
