Tofu, Shiitake and Kale Bowl?4 servings2 C cooked rice? (brown, wild, medley, whatever)1 T oil (coconut, olive, whatever)?1 medium onion, chopped?2 garlic cloves, minced?2 T soy sauce?½ t wasabi paste?½ t red pepper flakes1 C sliced shiitake mushrooms?½ -1 block tofu (firm or whatever), cubed?1 bunch chopped kale (about 4 C)--for very tender kale, chop finely?1 T sesame seeds, toasted(1) Saute' onion for a few minutes. Add garlic, saute' a minute(2) Stir together soy sauce & wasabi, add with red-pepper flakes and cook another minute.(3) Stir in mushrooms, saute' a few minutes.(4) Add 1/3 cup water and the kale. Cook until kale is about done to your preference, anywhere from 5 minutes for crisp to 10 minutes for tender.(5) Stir in tofu to heat through.(6) Top ½ cup cooked rice with 1½ cups veggie mixture and sprinkle with toasted sesame seeds.
