Two weeks ago I walked into my fishmonger to get some New Zealand line caught salmon and some large Mexican shrimp. Tommy, the owner, comes up behind me, taps me on the shoulder and says quietly "Doc, try this". He hands me a slice of fish on a toothpick he just grilled. Oh! my goodness it was amazing. I asked him what it was."Sea Bacon" he said.It was swordfish belly.
