Since it's New Year's Day, here is my Vegan Hoppin' John recipe (based on traditional ones I found):Vegan Hoppin' John2 c. raw brown rice 1 (15.5 oz) can black-eyed peas1 (14.5 oz) can petite diced tomatoesdrain liquid from cans of black-eyed peas and tomatoes into measuring cup (should measure approximately 1/2 c. each or 1 c. total), add sufficient water to drained liquid to cook rice according to package instructions (for instant minute brown rice, I needed to add approximately another cup of water). Add liquid to rice and cook as directed.While rice is cooking, saute in nonstick sprayed pan or pot:1 red bell pepper, chopped1 green bell pepper, chopped1 small onion, chopped1 rib celery, slicedCombine sauteed vegetables, cooked rice, black-eyed peas and tomatoes. Stir in 1/2 c. of imitation bacon bits (like Baco's)--approximately 1/2 a jar. Serve warm.
