As usual, I didn't exactly measure...

1 medium onion, halved and sliced
6 cloves garlic, chopped
1 bell pepper, cut in 3/4-inch squares
2-4 medium tomatoes, coarsely chopped
1 eggplant, cut in 3/4-inch cubes (leave skin on)
2 t turmeric
1/2 t coriander
1/2 t garam masala
1 can or 2 C cooked chick peas
Salt and pepper to taste

OPTIONAL Add 1/4 cup raisins with the chick peas.
OPTIONAL Add broth to make it soupier.

(1) Sauté onion in a little broth, water or oil of choice.
(2) When soft, stir in rest of veggies and spices and simmer for 10-15 minutes, stirring from time to time.
(3) Add chick peas (and optl raisins) and heat through another 5 minutes or so.

Serve as is or over quinoa, couscous, spaghetti squash, whatever.

ALTERNATIVES
-You could make this Italian by changing spices to oregano and basil and adding more tomato and no raisins. Serve over pasta, rice or Italian bread.
-You could make this East Asian by changing spices to ginger root, soy sauce, maybe a pinch of 5-spice powder, and tofu instead of chick peas, serve over rice.
-For Southest Asian, ginger, soy, fish sauce, a bit of tamarind paste and sweetener, and no chick peas or raisins, serve over rice.
