What am I doing wrong? And it could be that I'm not understanding how Macs store their files.

Not so much Macs as iMovie. There is no Save option in the File menu because iMovie saves as you work. You should have a large library file in your Movies folder named iMovie Library.imovielibrary which has all your work.

Some of what you Googled probably was about how to get a movie out of iMovie so you can put it on youtube or make a playable dvd or just save a standard movie file. This is "sharing" not saving. You probably also found stuff about moving a project to another disk. Since the imovie library is a single file that can get huge, once you are done with a project it can make sense to archive it to another disk to save space on your computer.
