When I smoked the chickens yesterday, I butterflied them, cutting out the backbones, rib cages and keel bones, threw the keel bones away and made a chicken/veggie soup with the rest and some onions, celery, carrots, peas, mushrooms, diced potatoes and a little fresh garlic, basil and parsley. It's a little nippy here tonight, so I'm having some of that. There's a lot of flavor in them backbones and I get a little meat and some skin with - prolly could use a little light Rum though.
