Yeah, I am always amazed to watch him work. He's almost as fast as a food processor (faster, if you include setup and cleanup time).

Martin Yan on how to debone a chicken in 18 seconds - The guy is awesome with an Asian chef's knife, and funny to watch:

This is a little easier and more detailed presentation, though the speech is pretty hard to follow: Instead of breading and frying, dusting with a rub and grilling over indirect heat is a thought. Finish with a BBQ sauce baste, or serve a sauce on the side - A lemon pepper mayo or Dijon mustard with some herbs might work pretty well, if you don't care for a tomato based BBQ dipping sauce. Celery sticks might go with the later dipping sauces.
