Yesterday I kept thinking about the avacados. I stopped at the fruit stand and bought a small avacado. Took this home, cut up two ripe tomatoes, the avacado opened and sliced into the bowl with the tomatoes, and then I put some sea salt, ground pepper, and some herbs de provence. Next I put some olive oil and finally with a bit of balsamic vinegar. WOW, was this a nice quick treat.


That is basically what we do, except adding garlic, onions, and green pepper, all finely chopped.

Good as a dip with crackers or chips.
