You may want to go midweek, because hotel prices are cheaper then. A lot of people going to conventions get in on Sunday nights so they often jack up the rates. It's much better to fly in to Vegas. The Strip is a royal pain in the butt to drive on because there's always a ton of traffic. Taxis are a much better option.

I don't know of any good restaurants for vegetarians. The best buffet is at the Bellagio, but it also costs money. Avoid the low cost buffets -- you get what you pay for, and the food, while plentiful, is not good. It's been sitting under the lamps for a while and it's dry and blech.
