I am making a (non-veg, sorry) Hoppin' John, accompanied by sauteed collard greens (recipe in previous thread), and cornbread.

From what I've been told, Hoppin' John (with all the fixin's) are symbolic and traditional for a prosperous New Year.

Black-eyed peas represent = coins
Collard greens, kale or green vegetables = money (green color)
Cornbread = gold (golden yellow color)

In any case, it is just a really yummy meal.
