What should we do with the FANG stocks when they crash hard on Monday, 2/5/2018?

A healthy correction in process - or a crash? History of the stock market following healthy corrections bolds very well for the individual investor.

Consider your time horizon, cost basis, each individual company's time horizon for their technology adoption life cycles, stability of their moat, their earnings, management, and whether or not the risk/reward investment of a Microsoft, Facebook, Netflix, Google, Amazon, Apple, Nvidia, Intel, Salesforce, Oracle, Qualcomm, etc... deserve to be a portion of your investment portfolio.

The same you would do in all other sectors of the market when you evaluate the barriers to entry, their moats, earnings, management, and how they fit or don't fit within your investment holdings.
