That sounds good, too.

I was discussing these options with one of my daughters, and she reminded me that I once made pea soup and put in diced salami, which I sautéed before adding to the soup.

You've had great suggestions. Let us know what you decide to use and how it turns out when you make it! I would think any treated meat would impart flavor...another couple suggestions...dried chipped beef or turkey bacon.
