Also, the business is seasonal. They are very slow right now, and will be until March. You have to make sure to plan ahead.

Yeah, I had thought of that, as everything around here is seasonal! I live right next to Atlantic City, and I was originally thinking of opening a small stand in the bottom of a two story building, then renting out an apartment or two upstairs. That way, I'd have an income stream during the winter months as well as my business income. Then I got to thinking about a franchise, but I don't know exactly how that fits in. I think the buidling probably has to have a certain look to it, which would preclude having apartments upstairs. I'll have to look into it further, I guess.
