QUINOA SALAD

per serving (approx)--

1/2 cup leftover cooked quinoa
1/4 cup leftover cooked black beans
1/4 cup leftover corn scraped from the cob
1 tbsp minced red bell pepper
1 tbsp minced onion
1/2 clove pressed garlic
sprinkle of cayenne & salt
1 Tbsp olive oil
1 Tbsp freshly squeezed lime
a few cilantro leaves
over 1 cup each arugula & baby spinach leaves and a few cherry tomatoes


Nice Alstro. Sounds delicious.

We had a quinoa/brown rice combo for dinner last night mixed with some veggies.
