Because what I would care about is how long my power lasts in adverse conditions, not in perfect conditions where the only bad thing is the power to my house is out.

I don't believe the numbers are based on perfect conditions, but rather typical conditions. I suspect your eight days without sun was atypical. And if the only bad thing is that your power is out the power company should have plenty of people available to deal with it, unlike a wide-spread outage.

... if I ever installed a powerwall there *WOULD* also be a manual cutoff switch under my control to isolate my house from the grid.

Of course there would be, that switch is standard equipment. People who want to find out how well their system works off the grid use it to find out.
