But what do you put on the ceiling? We talked to a drywall guy, and he said you can't put greenboard (water-resistant drywall) on the ceiling. They just put normal drywall (we're using 5/8" everywhere).

Ceiling shouldn't be half inch MR board (aka greenboard, greenrock, green sheetrock,etc.) unless your ceiling joists are spaced at 12 inches on center, or less. Regular sheetrock, preferably five eighths inch thickness, is fine there unless your shower ceiling is very low and subject to getting wet.
