I like the South Beach diet recipe for hummus:

1 15 oz can chickpeas
2 T fresh lemon juice
½ cup tahini
1/4 cup chooped yellow onion
3 cloves garlic
2 tsp extra virgin olive oil
2 tsp cumin
1/8 tsp crushed red pepper
½ tsp salt

Drain the chickpeas (reserving a little liquid to thin with later if needed) and puree in a food processor.

And of course, adjust any or all of it to your tastes. Yummy! I think I'll make a batch this weekend...
