Carpet and tile -- stay neutral!! beige but with tile, you can add a few accents. Anything goes with it....

stain resistant carpeting is a must if you have kids

If you don't care about resale, then do what you want but it will hinder you when it's time to sell. Just ask anyone who was foolish enough to install those mauve colored toilets and tubs in the 70's.
Or pink tiled walls....

You can always add area rugs for color
