CHCKEN PAPRIKASH

(1) Dry and salt 6-8 skin-on chicken thighs (or breasts or mixed parts). Sear skin-side down in 1/4 cup organic ghee, then sear the other side. While it's cooking, thinly slice 4 medium-large onions and 3 red bell peppers.

(2) Remove the chicken to a bowl and saute' the onions in the chicken fat & ghee for 5-10 minutes, stirring a few times. Add bell peppers and a bunch of pressed garlic.

(3) Stir in 1/4 cup sweet paprika and ~3/4 teaspoon cayenne and cook a few minutes, then add a cup or so of good chicken bone broth.

(4) tuck in the chicken and simmer 10-15 minutes, turning the chicken halfway through.

(4) When done, stir in 1 cup organic full-fat sour cream and serve over cauliflower rice w/steamed green beans on the side.

So easy, saucy, and yummy!
