I read a few recipes, then winged it.- chuck a whole chicken into a pot of water, bring to a oil & add 1" ginger root sliced, 6" chunked lemongrass, 2 star anise, 1 cinnamon stick, a few tablespoons fish sauce, a sliced half leek. Simmer till chicken starts to fall apart. Remove chicken, dispose of bones & skin, shred the meat.- Add veggies to your pot. I used 3 sliced baby bok choy & 1 large clove pressed garlic. Add the shredded chicken. taste--I added soy sauce.- Serve w/fresh mung bean sprouts, sliced jalapeno, cilantro leaves, sliced scallion, thai basil, & fresh lime.= mmm!
Remove chickenalso remove stock-making herbs & spices--lemongrass, cinnamon stick, etc.
