Close, but no cigar. Einstein didn't mention anything about a "hand" -- either in connection with putting it on a stove or the pretty girl. According to Bartleby, the actual quotation was:

"When a man sits with a pretty girl for an hour, it seems like a minute. But let him sit on a hot stove for a minute -- and it seems longer than any hour. That's relativity."

But actually, we don't know that Einstein actually said that either. The quotation comes second-hand from someone who was reminiscing about him at the time of his death.
