Saute 1/2 medium onion, chopped, in olive oil (or preferred fat) until beginning to caramelize, add a large bunch of asparagus, chopped into 1" lengths, and a quart of broth. Cook till asparagus is soft, then puree and stir in a cup of cream. Refrigerate (or not)--it's great either way.

Incredibly simple (hardest part is peeling the onion-), but impressive.
