dairy--full-fat dairy--is actually good for us.

And apart from those who are dairy-intolerant, I don’t see why vegans are against it. Dairy doesn’t kill animals - on the contrary. It incentivizes good care of the animals. Contented cows give more milk. And it’s far better nutritionally than all the veggie substitutes.

For lactose intolerance, I see a lot of lactose-free dairy products these days. Does that solve the problem?

I’m using clarified butter, or ghee, or in Germany it’s called Butterschmalz, as my go-to frying fat. It works beautifully - no smoke at high heat, no flavor, no harsh taste like with olive oil.
