1 qt chicken broth
3 cups water
1/3 cup wild rice, rinsed
1 duck carcass (not much meat left on it)
1 small box brown mushrooms, sliced
2/3 large sweet onion, coarsely chopped
1 carrot, sliced
2 ribs celery, "
1 parsnip, "
1 bunch curly kale, coarsely chopped
some orange peels (we shared a navel orange at breakfast-)

Add parsnip and kale last. And s&p to taste.

The dominant flavor is umami--roast duck, wild rice, mushrooms; with undertones of sweet--onion. parsnip, carrot, orange; and "green"--kale.

I'm sure this would be good as chicken or turkey soup, too--or pork or beef, even vegan.

The hubster went "mmm...mmm...mmm" the whole time he was eating it, and said "good, good, good!" after :-) I was thinking the same.
