and for just plain cheapskates!

I haven't read Jacob Lund Fisk's blog, Early Retirement Extreme, for a long time becasue he got tired of blogging and for the last few years random posts are regenerated daily so rarely anything new other than he revised some of the "reference" posts.

Anyway, I stumbled back into his blog and thought if any of you haven't seen in, you're in for a treat IMO:

If you enjoy this, read his FAQ and Popular Posts as well. I like some of his recipes, too. Reminds me that if you really want to spend rock-bottom-dollar but eat healthy, cook a big pot of bean soup to provide a week's worth of dinners, and a big bowl of tuna salad for lunches. Add some fruits and veggies, and voila--you are fed pretty well (if boringly) for very little. And healthier than most Americans, too.
