How about making some lacey poncho's or shawls using large needles/hooks? I don't know if they are going to be still "in style" this summer...but they are easy to make and can be made with all sorts of yarn. Add in some beads or metallic charms and they can be very pretty!
Take a look at the yarn labels, or, on-line, or, in your library for patterns - or just make two largish rectangles in the pattern of your choice and join them to make a poncho. I can't draw it out here, but I know you can find instructions online.
