I bought a probably similar blanket sized "picture" fleece for my daughter for Christmas last year. All I did was trim the edges to a "regular" rectangle. The blanket has survived a college dorm room with no problems (including washing).
If you really want to trim the fleece, you might look for some iron on edging, or get some thick yarn, a large eyed needle, and do a blanket stitch around the edge. (though the blanket stitch would easily catch on stuff...)
