I know that Thanksgiving is a hard holiday for some of us trying to watch our diets and carb counts. My philosophy, executed to perfection this year, is to be responsible in your food preparation, then pig out. It's only one day and as long as you do not make a habbit of it, Thanksgiving will not shorten your lifespan.

So in that light, my mom made Sweet Potato Pie with Splenda artificial sweetner. I had an unsweetened applesauce (the rest of the family loaded up on the sugar). I ate responsible portions of the SPP, stuffing, one roll, and applesauce. Then I went back for more SPP and stuffing. And although I had a perfectly good no-sugar-added apple pie waiting for me, I just had to go after the Pumpkin Pie.

Oh, and a fiar-cooked turkey in peanut oil. That and 2 glasses of Pinot Grigio and I was content. Tomorrow it's back on the saddle.
