Anyone else having fun doing this?

I'm not down to the nitty-gritty yet, but here's seeveral days' worth of eatz:

BR
coffee & cream (husband also eats toast & almond butter)

LU
2 days of Greek salad
2 days of sourdough "pizza"--sourdough toast w/olive oil, tomato paste, minced garlic & onion, oregano, mozzarella
2 days of huevos rancheros

DN
2 days of salmon piccata--1st day w/green beans, 2nd w/broccoli
2 days of baked chicken legs--1st day w/cauliflower rice pilaf, 2nd w/roasted diced butternut squash, halved brussels sprouts, onion wedges
mapo tofu (spicy tofu w/ground pork)--1st day with ginger eggplant, 2nd day w/stir-fried peapods
several days of beef stew

dessert of melon or yogurt w/berries & nuts

It will be more exciting when I get down to ingredients I rarely or never eat like canned tuna, canned chicken, beans & grains (which I used to eat regularly as a younger adult) like pasta fagioli, refried beans (from scratch) & tortillas (homemade), hummus & bread/crackers, red beans & rice, quinoa & black beans, minestrone soup (well sort of, if I'm out of carrots...)
