There's actually a lot of recipes out there for diabetics. If you want cookbooks for diabletics, Amazon has a few and I can recommend Patti La Belle's new book. She uses a lot of Splenda. It doesn't break down like Sweet n' Low does. Especially in baking. Her brownie recipe is actually quite good.
Also there's a lot of cooking sites on the net. Just put Diabetic Recipes in the search engine of your choice.
