However, I'm not a US citizen and reside in Taiwan. I've tried e-trade, but their application form prevents me from changing the country. Robinhood is also just available to US citizens. I've heard about interactive brokers but I'd like to know what others have done while outside the US.

The list of brokers that accept non US citizens living outside the US as customers is relatively small. Interactive Brokers is a brokerage that does so. I don't have an account with them, but have heard good reviews, especially if you're interested in trading bonds.
