I just remembered I have a bag of frozen mixed vegetables that includes carrots left from the grandchildren's visit last summer. Never opened it as it was emergency backup in case they didn't like some vegetables I was serving all week, but that never happened. That will go into the minestrone :-)

Like I said, I'm having silly fun w/this. I bought some herb plants last week (parsley, sage, rosemary, thyme--and cilantro, basil, dill, oregano, mint, and chives) so I'll have a supply of fresh herbs.

I also ordered sprouting seeds and mesclun-mix seeds from Amazon. Except for herbs, I haven't gardened for a long time.
