I notice you didn't mention hickory (the choice of us Southeasterners).

Yeah, I pretty much limit myself to what wood I have available au gratis around the house. I cut it, stack it, dry it and split it myself so no hickory unfortunately. One wood I didn't mention that grows like a weed down south where I work is ash. I used it a few times and it burns fast so you have to watch it more than the others, but I really like the flavor, it was surprisingly good.

PS: I got a special receipe for walnut that involves mushrooms, 12 hours and a quart of burgandy wine (I knew I'd find a use for that stuff).
