I recommend Linux Mint as it is very close in look and feel to a Window OS. I use the XFCE version with good results on old and small footprint hardware. I also recommend you get the Linux server up and running before you take the window server off line. There is little difference between a Linux server and a desktop version wrt simple servers. I find a lot of good info searching on YouTube.Please excuse me if this is not what you were looking for.
