I used to be a barista at Starbucks, and when someone wanted 2% (which we didn't stock in the fridge) we would steam a pitcher of half whole and half skim milk. I wonder if that is still the official procedure?
If it isn't, all the stores will need to stock 2%, skim and a small amount of whole milk instead of simply whole and skim like I used to. That probably won't be much of an issue at large stores, but fridge space in small stores was always an issue.
Of course, you can make skim milk taste like whole milk by adding half and half - maybe they're doing that...
