I was hoping for a recipe for a decent mint dipping sauce

Here's an Indian version that graced a plate of lamb curry I had not too long ago.

Mint-Dhania Chutney

Mint leaves - 1 cup
Dhania leaves - 1 cup
Green chilis - 3
Tamarind - Just a little
Salt - As appropriate

Method:

Grind all ingredients together.
Mix 1 spoon lemon juice with ingredients to taste.

This is pretty close to what was on my plate. Tamarind can be found at just about any Asian or Mexican store.

Dhania = cilantro.
