I would gladly pay money to get even one more hour to spend with my dad, but you don't get that option once they're gone.

This is such a tricky area, and so hard to determine except in hindsight when it's too late, but FWIW, my experience was the opposite.
During the 2 years of my mother's final illness, my sister and I spent a LOT of time with her, not only to keep her company but also to help our father who was primary caregiver (and not a very good one), despite my having a very demanding job and Sis having a young teen at home for whom she was the single parent. In retrospect, given the toll it took on us, it would have been better if Mom & Dad had brought in paid help, so Sis and I could spend quality instead of quantity time with Mom.

Given that OP has several young children, a demanding job, and a precarious financial situation, IMO any time she spends with her mother at all is gravy.
