I'm going to see what's on sale at the supermarket but whatever cut of meat I get is going to be grilled over hot coals on the weber. St Louis pork steaks sound good, grilled until 3/4 done then finished up in bbq sauce diluted with a can of beer. I like to pan-fry a steak in my CI skillet every once in awhile- It makes the best mushroom pan gravy with all of the meat juices.
