I've never had an MRE. Closest I've come to manufactured prepper food was freeze-dried hiking dinners back in the 70s--for actual hikes.

My fave emergency rations are pouches of Indian vegetarian entrees! I like both tasty Bite and trader Joe's brands. I buy a dozen when they go on sale. Many have beans, dal, or paneer for protein. I keep some shelf-stable cream and powdered cream on hand for coffee and chai. AS well as the usual nuts & nut butters, canned/jarred items, beans/dal/split peas and grains. I have seeds & equipment to make sprouts & baby greens, which I do once in a while. Although I low-carb these days, I know how to make pancakes, breads, crackers, roti and tortillas and have ingredients.
